In Europe, Germany leads the way with 25% of production volume, followed by Italy (10%), Spain, France, and Poland (9% each), and the United Kingdom (8%). Each country brings its own heritage and specialtiesfrom German smoked sausages to premium Italian and Spanish hams.
France: a mature, high-expectations market
In France, cured-meat products are an integral part of food culture. Nearly 99.3% of households consume them, averaging 30 kg per person per year, with an annual spend of €303. Between 2018 and 2022, the French market grew by 15.9%, reaching a turnover of €7.13 billion.
This growth is accompanied by a push for premium quality: consumers are seeking cleaner-label products with fewer additives and a stronger link to regional origins. According to a 2023 study by FCIT, the cured-meat aisle holds the highest net margin in French grocery retail—and is the only one with increasing margins between 2020 and 2022.
