Biraghi works with local farmers to produce 100% Italian cheese products

The dairy specialist aims to win consumers over by blending quality with tradition

With a history stretching back to 1934, Italian dairy company Biraghi comes to SIAL Paris 2022 to tell its story and showcase its new products.

In 1934, the company was founded by Ferruccio Biraghi in Cavallermaggiore, a commune in the Italian region of Piedmont. The company founder moved there from Lombardy, looking to start his entrepreneurial venture, and founded the company as a simple artisanal business.

Since then, Biraghi has crafted a reputation in the Italian dairy sector, working with approximately 200 local farmers and producing milk the company prides itself calling “100% Italian.” The company claims that attention to quality, and respecting tradition, are two pillars of its strategy.

The company has stayed on top of trends and consumer preferences by continuing to develop and innovate its products. In particular, Biraghi has stood out by offering products that do not feature the preservative lysozyme.

470,000 litres of milk are collected at the company’s factory every day. This is partly used to produce approximately 320,000 wheels of the company’s Gran Biraghi product, and 270,000 wheels of gorgonzola on an annual basis. During the work process, it is reported that Biraghi uses both traditional handicrafts as well as the latest technology to produce its popular cheeses.

The Gran Biraghi and gorgonzola offerings are packed in several formats and sizes. Gran Biraghi grated cheese is another popular offering from the company, and comes in five different sizes. The Biraghini Snack is another standout from the Italian dairy outfit, sold as a product that can be enjoyed on-the-go during any time of the day.
