Avem bakes baguettes with tech and tradition
Avem is a Croatian family bakery that bakes baguettes in a process that blends tradition with modern technology. The largely-handmade Moj Kruh (“my bread”) baguettes are made from homemade sourdough, “prepared in the way our ancestors did since 1880.” The company’s baguettes are available baked and frozen, via a quick-freezing shock method, which the bakery says preserves quality and freshness. After being presented at SIAL Paris 2022, the products will be launched on the market.
