Maison Chavin’s latest non-alcoholic wine launch, the Florentina collection, was distinguished from some of its competitors with a SIAL Innovation selection for the Spritz line. The sparkling wine with a tangy aroma and notes of spice and vanilla is one of three flavours in the series, the others being Peach and Red Berry. Chavin, led by Mathilde Boulachin, has created the new zero alcohol range for aperitifs, “relaxing afternoons in the sun”, or with meals, but said they are also ideal for mocktails. The Florentina collection is vegan and sulphite-free and has been created from night-harvested grapes, pressing and then conservation of musts. Organic yeast infusions plus other components ensure flavour complexity while the fizz is obtained by adding natural carbon dioxide at a very low temperature. Bottles pass through a pasteurisation tunnel to stabilise the product in order to eliminate the need for preservatives and sulphites.
