Sushi Robots presented its take on Japanese gastronomy

With a skilled sushi chef on the stand, the company gave visitors to SIAL Paris 2022 a taste of Japan’s most famous food.

As a consultancy on everything to do with sushi, Sushi Robots was at SIAL with a range of services from sushi machines and technical services to training and installation. Managing Director Alice Touchais and Sales Director Kiyoko Hay told SIAL Daily they were impressed at how global the show was in terms of visitors.
They were showing some key equipment for Japanese gastronomy like Autec’s ASM865 CE rice sheet maker designed for sushi, delivery or take-away restaurants. The unit has been designed based on customer feedback to offer a compact footprint but a large hopper capacity for the cooked rice. The capacity is claimed to be among the biggest in the world. A heating device is incorporated to ensure that the rice is at exactly the right temperature when the rice mat is made. Sensors known when a finished rice mat is picked up by the user so that another one can be prepared (when in automatic mode). This means that several chefs can use the machine at the same time.
Also on display was the retro-looking, hand-operated Swan ice-making machine for desserts (among other things). The unit can shave flavoured ice or iced fruit juice and has a disk made of corrosion-resistant aluminum plus a stainless steel blade. By using a geared drive the power required to shave the ice is minimal.
Sushi Robots started out as a school for sushi in the UK which became a great success with professionals looking for specialist training. After several back-and-forth trips to Japan, the business realised how important machines were to aid the sushi preparation process and a new arm of the business was born. Sushi Robots is now based in La Rochelle with offices in the UK and Spain.
