Fromagerie Germain: Celebrating cheeses inspired by French regional tradition
Nestled at the intersection of Burgundy and Champagne, Fromagerie Germain has been maturing cheeses every day for over a century with two in particular – Langres and Époisses – that have become iconic. Both are AOP (protected designation of origin). Époisses is considered one of the emblematic cheeses of Burgundy. It is known for its creamy texture and powerful, rich flavour. Langres is slightly less intense with a distinctive hollowed-out shape. This is due to its maturing process, during which it is never turned. Tradition dictates that a few drops of Champagne are poured in so as to flambé it and reveal some sweeter notes.
