International success cooked up by a woman missing home

When Maiara Righi moved to Portugal, she began craving her cherished childhood snack but it was nowhere to be found. Seeing an opportunity, she launched a business selling the traditional Brazilian food made from chicken covered in delicious dough and deep fried. Now, her Madre Coxinha products are sold in at least five countries while her brand has partnered with food developer Nordigal to meet rising demand. “I had never made them before in my life and now it is my business,” she said. “What started as a factory of 15m2 has kept growing. I am very particular about the quality and flavour to ensure it tastes as though it were made by a Brazilian madre.”
