Artisan salami from Salumi Grossetti with PDO status

Salumi Grossetti was at SIAL Paris 2022 with a full range of the meat products it is renowned for. In addition to the traditional cured meats of Val Tidone in the Piacenza province, the artisan salami factory produces three Piacenza PDO cured meats : salami, coppa and pancetta. Piacenza is the only province in Italy able to boast three cured meats recognized with the Protected Designation of Origin which underlines the steeped traditions of these products. The pigs intended for the production of the three PDOs must come from the Emilia Romagna and Lombardy regions, while the processing area is limited to the province of Piacenza only.
